I love Rhubarb. I love that it grows like a weed and that most people get sick of it and want to just simply give it away. We live in an apartment and the neighbor on the other side of the building had two HUGE un touched Rhubarb plants basically the size of a small car. I asked him to cut it all down in exchange for a Rhubarb crisp for him. 6 rhubarb crisps made later I still have enough in my freezer to make another 2-4 crisps!
This is the recipe I used and it turned out fabulously delicious. I must say that the orange zest and juice sure gives it a great tang. I threw some extra pieces of rhubarb in without the sugar to give the crisp back some of it’s rhubarb flavor because I found it a bit too sweet personally.
